The Perfect No Bake Cookies
By Deb Bloom of Gimme One of Each
I love chocolate. Most girls do. I have the perfect No Bake cookie recipe. They don't get hard, they have the perfect amount of chocolate and oatmeal. They are best kept in the fridge. Here's the recipe. Read it, make them and see if I'm right or wrong. You have to follow this recipe to the hilt, especially the cooking time. Enjoy! Ingredients: 2 cups sugar 1/4 stick margarine 1/3 cup cocoa 1/2 cup milk Bring these ingredients to a bowl in a large saucepan. Stir continuously. When the mixture comes to a rolling bowl, turn the timer on for 1 minute. When the minute is up, remove from heat immediately and add 1 teaspoon vanilla and a heaping spoonful of peanut butter. I usually use a regular cereal spoon and just scoop the peanut butter out of the jar, it's probably about 2 tablespoons. Stir this well. Then add 2 1/2 cups quick oats. I also add shredded coconut if I have it, approximately 1/3 cup, and if I do add coconut then I only put in about 2 1/4 cups oatmeal. You have to play with it a little as far as coconut and oatmeal but the secret is boiling for 1 minute only! Keep experimenting. It really does make a nice batch of No Bake cookies.
