Mountain Pies - In Case We're Still on Sandwiches By Deb Bloom What is a Mountain Pie? If you are an avid camper, you already know and can enjoy the recipes below without reading the rest of this. If you don't know what it is, you don't know what you're missing. First you need a mountain pie iron. There are links below to take you there. You make a Mountain Pie preferably over a campfire, but it can also be done in a fireplace or any open flame. Butter outsides of 2 pieces of bread, lay them in the pie iron, and place food inside the bread. Close the cooker, putting the 'sandwich' together inside the cooker, and place over the flame for a few minutes. A few minutes over the heat and a perfectly toasted sandwich or pie emerges from the cooker. You can literally use anything in the pies, from dessert to a meal. Here are some recipes for you to enjoy. You can vary them or make up your own. Pizza Refrigerated Pizza Dough or bread Marinara sauce Mozzarella Cheese Pepperoni Sausage Ham Shrimp Cocktail Bread Cocktail sauce Cooked shrimp Cheddar cheese Roasted red peppers, if desired Meatball Sammy French Bread Meatballs - sliced Marinara sauce Mozzarella Cheese Chicken Cordon Bleu Wraps Flour Tortillas Sliced Chicken breast Ham Swiss Mayo Reuben Corned beef Swiss cheese Saurkraut Thousand island dressing Taco Sandwich Flour or corn tortillas Seasoned Ground Beef – well drained Refried Beans Cheese Serve with sour cream, salsa, guacamole Barbecue Pork Sandwiches French Bread sliced BBQ Pork BBQ sauce Cheddar Cheese Chicken Pot Pie Refrigerated Biscuit dough Diced Chicken Cream of Chicken Soup Canned Mixed Veggies Grilled Cheese Hamburger Buns – may need to trim edges Sliced American Cheese (2 or 3 slices per sandwich) Tomato – Sliced thin, seeds removed Grilled Onions Pickles Thousand Island Seafood Sandwich Spinach Tortilla Prepared Spinach Artichoke Dip (from costco) Crab Meat (canned or imitation) Grilled Shrimp Spicy Italian Pie French Bread Pepperoni Salami Ham Banana peppers Provolone Spicy Mustard Italian Dressing Patty Melts Sourdough Bread Ground Beef Cheddar Cheese Sauteed Onion Thousand Island Chicken BBQ Pie French Bread or flour tortilla Sliced Chicken Breast Corn BBQ Sauce Monterey Jack Cheese Diced Green Chiles The Camp Club Turkey Bacon Swiss Cheese Ranch dressing The Mountain Pierogie Mashed potatoes Cheddar cheese Sauteed onions Buffalo Pie Chopped precooked chicken Redhot and pepper jack cheeses Dip in either ranch or bleu cheese dressing Lasagna Pie Precooked ground beef Ricotta cheese Provolone cheese Spaghetti sauce DESSERTS Cinnamon & Sugar Treat Pillsbury Crescent Rolls (roll into small rounds, place side by side in iron) Butter Sugar and cinnamon Peaches and Cream Pie (or cherries) Refrigerated Crescent rolls Peach Pie filling Cream Cheese Turtle Pies Refrigerated Crescent rolls Caramel cubes Hershey’s chocolate squares Pecans Apricot Cheese Pie Pie Dough Apricot Preserves Gorgonzola Cheese Walnuts Banana Split Pie Angel Food Cake slices Bananas Marshmallows Chocolate chips Maraschino cherries You can use scrambled eggs, breakfast meat and other desired ingredients for another variation.
